Marinated Crottin in Olive Oil and Herbs

Ingredients

  • 2 Crottin
  • 1 teaspoon peppercorns
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon red pepper flakes
  • Extra Virgin Olive Oil
  • 2 ” piece of fresh lemongrass
  • 1 bay leaf
  • 1 glass pint jar

 

Directions

  1. Place half of the peppercorns, coriander seeds, and red pepper flakes in the bottom of the pint jar. Delicately place one Crottin on top of the spices.
  2. Fill the jar with just enough olive oil to cover the Crottin.
  3. Add the remaining peppercorns, coriander seeds, and red pepper flakes to the jar, then place the second Crottin on top.
  4. Slide the lemongrass and the bay leaf between the sides of the cheese and the glass jar, then add enough olive oil to cover the top of the second cheese.
  5. Seal the jar and store, refrigerated, for 2-3 days. Remove jar from refrigeration 1-2 hours before serving.
