Cucumber & Fresh Goat Cheese “Mocki” Rolls

  • 1 English cucumber
  • 8–10oz French fresh goat cheese such as feta, log, crottin, spreadable
  • 2 tablespoons Chopped chives
  • Salt and freshly ground pepper
  • 1 Small jar salmon eggs



  1. With a vegetable peeler or a mandolin, thinly slice cucumber lengthwise.
  2. Mix cheese with chives, salt and pepper.
  3. Place a teaspoon of goat cheese mixture on one end of each cucumber slices. Roll cucumber around the cheese, and secure with a toothpick.
  4. Place “mocki” rolls upright on a serving plater. Top with a 1/2 teaspoon of salmon egg.
