Cucumber & Fresh Goat Cheese “Mocki” Rolls

Yield: 12–15
Ingredients
1 English cucumber
8–10oz French fresh goat cheese such as feta, log, crottin, spreadable
2 tablespoons Chopped chives
Salt and freshly ground pepper
1 Small jar salmon eggs
Directions
With a vegetable peeler or a mandolin, thinly slice cucumber lengthwise.
Mix cheese with chives, salt and pepper.
Place a teaspoon of goat cheese mixture on one end of each cucumber slices. Roll cucumber around the cheese, and secure with a toothpick.
Place “mocki” rolls upright on a serving plater. Top with a 1/2 teaspoon of salmon egg.
