Cucumber & Fresh Goat Cheese Tea Sandwiches

  • 8 slices extra thin white bread
  • 3 cucumbers
  • 8oz French fresh goat cheese
  • juice of 1 lemon
  • softened butter
  • salt and pepper



  1. Peel and thinly slice cucumbers. Dash them with salt and a squeeze of lemon juice.
  2. Lightly butter the bread, then spread chèvre on each slice.
  3. Right before serving, layer the cucumber slices on half of the slices of bread, then top to form sandwiches. Slice the crusts off, then slice each sandwich into small rectangles. Serve immediately.
